Shortcake with fresh Strawberries

Shortcakes are always good, and good think is you can eat them with many things...
On top of that it is very easy and fast to make:)

What you need for the scones:
2 cups all-purpose flour
1/3 cups white sugar
2 1/2 tsp baking powder
1/4 tsp salt
1/3 cups (or 75gr) butter in cubes (not melted)
2/3-3/4 milk
1 tsp vanilla extract

For the filling:
Ideal would be some whipped cream or creme patissier
Fresh fruits: Strawberries, blueberries, and other berries
Or whatever else you feel like:)

Tip: If you are a cinnamon fan, guess what you can add as much cinnamon as you want and create cinnamon shortcakes;)

Music recommendation: Strawberry shortcakes by Fujifabric! Awful song, but suitable title:)))



1.  In a bowl mix, flour, sugar, salt and baking powder


2. Then add the butter in cubes and mix in with the hand...


3. ...Until the mix becomes like sand:) (I guess I miss summer a lot)


4. Add the milk with the vanilla extract and mix well but not TOO much!


5. The mix becomes muddy and soft...


6. ...and sticky


7. Taratataaaaaaa (my new tool, in its first on screen appearance) The already cut in pieces silicone pan:))) (It was a present from a friend) Of course you can use any round pan, but the portion is only for a small one:) Preheat the oven at 200° C and bake for 20min.


8. Look at my blonde beauties:)


9. Cut them and fill them with whatever is in your heart...


10. Take a closer look, and enjoy...

Bake me Pink Lemonade:)

Hello followers summer is here and I decided to welcome it, even though it plays hard here in 
Finland...
sooo I made some 

Pink homemade lemonade:)

You need!

1 cup of lemon, lime, pink grapefruit juice
1 cup of white sugar

To serve:
Palm tree sugar
Lime
Frozen grapes: instead of ice:)

I hope u like it as much as I do:)

1. Cut


2. Put the one cup of sugar in the host bottle


3. Pour the juice:)

4. and.... shake shake shake..


5. ..once more


6. Serve: Put the frozen grapes in a wine glass


7. And the palm tree sugar:)


8. Put a little bit of the mix in the glass...


9. And fill in the rest with sparkling water:)

10. Fresh : Pink : Cool : Sparkling...

Spinach pie

Long time no see,

I promise that will not happen again:)
This time I decided to post a very common spinach pie, that almost everyone likes!
The dough is very easy to make and you can open it with the hand, depending on how big you want it!

Dough:
1 cup warm water
1 Tbsp olive oil
1 Tbsp white vinegar
1 tsp salt
and flour (I don't know the exact amount of that, but your dough has to become soft and non sticky when ready)

Spinach filling:
800 gr. spinach
6-8 spring onions
2 normal onions
1/2 cups cream (or greek-style yogurt)
1 cup chopped parsley
pinch of oregano
pinch of thyme
4 eggs
400 gr. feta cheese
(this amount  is for a rich filling)




1. Mix the water, oil, vinegar and salt and start adding flour little by little


2. The dough becomes one and is soft but not sticky, cover it and put it in the fridge for 3 hours (it can stay more, but minimum 3 hours)




3. Boil the spinach until soft (by boiling it almost loses half of its volume)


4. In another pan saute the spring onions and the normal onions the parsley, as well as a little bit of oregano, or thyme


5. ...and when the spinach is ready remove the water and add it to the onion mix, stir together and remove from the stove.

6. In a bowl beat the eggs and mix in the cheese and the creme

After the 3 hours take the dough out of the fridge, divide it in 4 balls press into flat circles and roll them out with a wooden stick. Afterwards take the daw in you hands and open by extending to all directions. This is very easy since the dough texture is very loose (I will give more directions on that upon request;)) When the pastry leaves are ready..


7. Grease the pan you are using and...put 2 leaves on the base, add the filling and top it with the 2 remaining pastry leaves! Between the 2 base leaves as well as between the 2 top leaves grease with olive oil, when all is set...


8. The pie should look like that before you put it in the oven! Some people even precut it before baking it, you can do it so that the dough doesn't break afterwards. Bake for about an hour at 180° C, until the crust becomes golden brown..


9. And.. voila!

Easy, full, mouthwatering, warm mmmm...
